Spicy Maple Korean Fried Chicken Pancakes – Pancake Day

It’s Pancake Day! Apparently Canadians are supposed to celebrate this as well but I’ve never <_<

I make and eat pancakes pretty often so I wanted to do something different. Since chicken and waffles are a thing, as are chicken and pancakes. I thought I could bring my own twist to this 😀

Fluffy pancakes with, sweet, sticky, spicy chicken on top – trust me you’re going to love this.

Pancakes:

I always use the martha stewart pancake recipe, it’s easy, basic and never goes wrong.

  • 1 cup all-purpose flour, (spooned and leveled)
  • 2 tablespoons sugar.
  • 2 teaspoons baking powder.
  • 1/2 teaspoon salt.
  • 1 cup milk.
  • 2 tablespoons unsalted butter, melted, or vegetable oil.
  • 1 large egg.

Whisk ingredients together in a bowl and set aside. It’s good to let the batter rest, but we’ve gotta make some chicken!

Maple Gochujang Glaze:

  • 1 tbsp korean red pepper paste (gochujang)
  • 2 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 tbsp real maple syrup
  • 1 green onion, finely sliced
  • 1 tbsp toasted sesame seeds

Whisk to combine and set aside.

Fried Chicken:

  • 4 skinless boneless chicken thighs in 1-2 inch cubes
  • 1 cup buttermilk
  • 1 cup flour
  • salt and pepper
  • neutral oil for frying

Place the chicken in buttermilk and let sit for a moment. Place flour into a large container and season liberally with salt and pepper. We’re just going to basic dredge this chicken since the sauce it’ll be covered in will be so flavourful, but we need to at least season it.

Take chicken from buttermilk and toss in flour mixture until coated. If you’d like extra crispy bits, just repeat the process.

In a small pot or sauce pan, shallow fry chicken until golden brown and cooked through. Transfer to wire rack or baking sheet on an even layer to prevent it from becoming soggy. Set aside and get started on your pancakes!

(If you care about your chicken cooling down too much during this process, preheat your oven to 200F and place the chicken in there. It’ll stay warm without overcooking.)

Before serving, toss chicken in glaze and place on top of pancakes. Drizzle any remaining sauce over and enjoy! This would also go gloriously well on waffles!
